Used an Opsak on the CT in 2015, slept w/food in my tent every night with no problem. You'll inevitably sleep above tree line with nothing to hang it on in some areas.
I second the recommendation to ditch the 14ers and do CT West, it has some of the best scenery before the San Juans, and far, far less traffic. You can always go back and do the 14ers piecemeal, harder to do all of CT West after the fact, and it is one of the most beautiful sections of the trails.

On the CT I've used an ursack with a opsak inside and tied to ursack to a tree when possible. Never had a problem with critters.
