I would go to Zion or the Escalante area.
The hikes in Canyonlands and Arches are very hot in summer. Zion (or Escalante) is hot too, but there are many wet hikes that are perfect for summer as long as flash flood danger is low.
Zion Narrows, Orderville Canyon, or the Subway, all in Zion are perfect summer destinations.
Often in summer, Arches and parts of Canyonlands are 110+ and are unpleasant. When you are wading through water in a shaded canyon, it's not bad. If you did go to Arches, hike very early in the morning and in the afternoon hike the nearby Professor Creek or Mill Creek in the hot part of the day. Lots of cool water and waterfalls.
