This is as simple as it gets since you don't have much time. Drive to Hunter Mountain Ski Resort in the Catskills. Take the chairlift to the top (has to be on the weekend). Hike to the top of Hunter Mountain, the second highest peak in the Catskills. Excellent views from the fire tower at the top.
